Garlic White Bean Dip

Ingredients:

Directions:

  1. Drain and rinse beans, reserve 1/2 c for garnish.
  2. Puree beans, garlic, lemon, salt and pepper in food processor, slowly drizzle in 1/2 c olive oil while processor is running.
  3. Transfer to a bowl.
  4. Toss the reserved beans with the red pepper, 3 tbls olive oil, parsley and basil and then spoon over the dip in the bowl.
