Garlic Potatoes Soup

Ingredients:

  • 1 large onion (diced )
  • 4 medium potatoes
  • 3 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp dill
  • 1/2 tsp thyme
  • 1/4 cup barley
  • 1 1/2 cups cottage cheese

Directions:

  1. Peel garlic.
  2. Cut the onion in chunks.
  3. Peel potatoes and cut in chunks.
  4. Boil broth with tomato paste and herbs.
  5. Add garlic, onion and potatoes.
  6. Cover and cook on low heat for appr 40 minutes.
  7. Puree the soup (in a blender or by hand).
  8. Add cottage cheese and serve.
