Ingredients:

Directions:

  1. Combine tapioca and 1 cup water.
  2. Bring to a boil and simmer 2-3 minutes.
  3. Add orange juice and mix until well blended.
  4. Add remaining water.
  5. Cover and refrigerate until thoroughly chilled.
  6. Cut fruit into bite-sized pieces and add to chilled soup.
  7. Serve in well-chilled mugs and garnish with fresh mint if available.
  8. Cooking time is chilling time.
