Ingredients:

Directions:

  1. In a microwave safe bowl, add together the sugar, cornstarch and apricot nectar; mix until smooth.
  2. Microwave on HIGH for 6-8 minutes or until slightly thickened, stirring every 2 minutes.
  3. Stir in the vanilla.
  4. Refrigerate.
  5. In a large bowl, combine the fruit.
  6. Drizzle with dressing; gently toss to coat.
  7. Refrigerate until ready to serve.
