Fried Cucumbers

Ingredients:

  • cucumber sliced in 1/8 inch thick slices (you decide how many you want for how many people. 1 small cuke will easily do 4 people)
  • salt and pepper

Directions:

  1. Slice cucumber to 1/8 inch thick rounds, or, if you feel fancy on the bias (angle)
  2. Roll in flour
  3. Heat butter in a skillet til bubbly
  4. Lay cukes in butter and fry til light brown
  5. Add salt and pepper to taste
  6. ***for a variation fry in bacon fat (you've been saving from some of my other recipes) or extra virgin olive oil
  7. *** Also goes great with sour cream or sour cream and dill also on top when served with fish
