Directions:

  1. Melt butter in a big skillet over medium-high heat.
  2. Add in the onion slices; cook for 5 minutes and stir frequently.
  3. Add the squash and bell pepper; cook for 3-5 minutes and stir frequently.
  4. Add tomato wedges, salt, and pepper; cover, lower heat, and simmer 5-10 minutes.
  5. Put spinach leaves over vegetable mixture, cover and cook over low heat for 3 more minutes.
  6. Add cheese; cover and cook 2 minutes or until spinach is wilted and cheese is melted.
  7. Serve immediately.
