Fresh Raspberry Sauce

Ingredients:

  • 1 tbsp cornstarch
  • 3 tbsp sugar

Directions:

  1. Puree berries.
  2. Press through a sieve into a 3 cup measuring glass.
  3. In an bowl, mix cornstarch with a little juice and set aside.
  4. Pour the rest of the juice into a heavy saucepan.
  5. Add sugar and orange or lemon juice.
  6. Heat slowly to dissolve sugar, stirring.
  7. Bring to just before it boils and remove.
  8. Add cornstarch mixture.
  9. Reduce heat, simmer, stirring for 1-2 minutes until it thickens.
  10. Cool to room temperature.
  11. Spoon over your favourite dessert.
