Fresh Peach Cake (Or Cobbler)

Ingredients:

  • 4 medium fresh peaches
  • 2/3 cup sugar
  • 1 tbsp flour
  • 1/8 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 cup butter or 1/4 cup margarine
  • 1 cup flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 large egg, beaten
  • 1/3 cup milk
  • heavy cream , whipped (optional)

Directions:

  1. Wash peel and slice peaches.
  2. Combine next 4 ingredients. Add peaches. Mix well and turn into a 8x8x2-inch pan. Dot with butter.
  3. Sift together next 4 ingredients. Combine egg and milk and add to dry ingredients along with the melted butter. Mix only until ingredients are blended. (DO NOT OVERBEAT).
  4. Spread batter evenly over the sliced peaches.
  5. Bake in a hot oven (425F) for 30 minutes or until browned and baked through to the peaches.
  6. Let cool, top with whipped cream if desired, and enjoy!
