Ingredients:

Directions:

  1. Combine egg yolks, sugar, and salt in top of double boiler.
  2. Water must be boiling.
  3. You must watch mixture and stir constantly.
  4. Turn down heat and cook until it reaches 165 degrees.
  5. The mixture will be thick and light in color.
  6. Remove pan from stove and stir in orange juice and orange rind.
  7. Cool.
  8. Beat whipping cream until soft peaks form.
  9. Fold in cooled Orange Mixture into whipping cream.
  10. Cover and chill at least 2 hours.
  11. Serve with your favorite fresh fruit.
