Ingredients:

Directions:

  1. In a medium sauce pan, add the 1/4 cup of water and bring to a boil.
  2. Slice the onion into thin strips and add to the water. Continue cooking until onions clarify.
  3. Once the onions are clear, add 4 cups of beef broth. Bring to a boil and then simmer for about 15 - 20 minutes.
  4. Shred the mozzarella.
  5. Once done, place two cups of soup into bowl, garnish with 1 ounce shredded mozzarella and 1 tablespoon croutons and the red pepper, if using. Enjoy!
