Ingredients:

Directions:

  1. Prebake pie shell at 425 F for 7-8 minutes.
  2. Cream sugar with butter until light.
  3. Beat in egg yolks one at a time.
  4. Beat in lemon zest and juice.
  5. In a separate bowl, beat egg whites until stiff.
  6. Lightly fold egg whites into the filling.
  7. Pour filling into pie shell and bake at 350 F until set and lightly golden, about 25-30 minutes.
  8. Cool and serve.
