  1. Brown bacon over high heat in a large stockpot, about 8 minutes. Add garlic, and onion, saute about 6 minutes. Add spinach, saute 2 minutes, mixing in browned bits. Add beans and all remaining ingredients. Simmer 10 minutes. Garnish with parmesan if desired.
