Festive Green Salad and Sugared Nuts

Ingredients:

  • 1 cup olive oil
  • 3/4 cup sugar
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tsp paprika
  • 2 cloves pressed garlic
  • 1/2 cup sugar
  • 1/8 tsp cinnamon
  • 1/8 tsp salt
  • 2 1/2 cups nuts
  • 1/4 cup real butter

Directions:

  1. For the salad: Use bagged spring greens and sprinkle crumbled feta cheese, craisins and sugared nuts (almonds, pecans, walnuts or cashews). You can also use honey roasted nuts, or smoked almonds.
  2. For the sugared nuts: Heat oven to 325.
  3. Combine sugar, cinnamon and salt in a small bowl.
  4. Place egg white in a separate bowl and beat at high speed of electric beater till soft peeks form.
  5. Continue beating, adding sugar mixture gradually till stiff peaks form. Gently stir in nuts by hand.
  6. Line a 9x13 pan with heavy duty tin foil. Melt the butter in the oven in the foil lined pan.
  7. Spread the nut mixture evenly over the butter.
  8. Bake stirring about every 10 minutes till nuts are browned, and no butter remains (about 25 minutes)
  9. Cool completely; then store in airtight container.
