Felafel  Fried Chickpea Fritters

Ingredients:

  • 1 lg garlic clove or as desired
  • 1/2 ts dried corriander ( some chopped fresh is even better )
  • 6 sprigs fresh parsley
  • salt to taste
  • flour as needed prior to frying
  • optional
  • cup
  • hopped fresh cilantro, some cooked bulgur wheat as a filler/binder if needed or even some dried breadcrumbs

Directions:

  1. Cover dried peas with water and let soak overnight.
  2. Drain well
  3. Put in a food processor the onion, garlic and spices etc.
  4. Pure mixture finely but not into a paste,
  5. Add baking powder and mix well.
  6. Mixture should be firm enough to roll/form into balls.; if not, add some filler such as a Tbs of flour or some cooked bulghur wheat
  7. Wet hands and form into balls the size of a walnut.
  8. Roll in some flour to coat and deep fry in hot oil till golden.
  9. Make sure your oil is hot enough for deep frying.
  10. Drain on paper towling
  11. Serve with a hummus dip in pita bread
  12. Or eat with a salsa sauce ( not traditional but really good ! )
  13. Note: do not use canned chickpeas with this recipe it won't turn out well!
