Ingredients:

  1. Pierce potato and microwave on high 5 minutes.
  2. Cut in half and scoop out the potato.
  3. Using a fork mash with butter and milk.
  4. In a 9 x 5 glass dish, stir beef with ketchup.
  5. Microwave on high uncovered 1 minute.
  6. Stir and break up any lumps.
  7. Continue microwaving for 1 more minute.
  8. Finely chop corn or vegetables (or leave whole.
  9. Stir into the meat.
  10. Smooth into an even layer.
  11. Top with potatoes, covering meat evenly.
  12. Microwave, uncovered, 2 minutes.
  13. For a golden potato top, slide casserole under a preheated broiler for 1-2 minutes.
  14. Watch to present browning.
  15. Cook to lukewarm before serving.
  16. Serve with a salad for a quick and tasty meal in a hurry.
