Fast and Easy Pork Chops

Ingredients:

  • 4 pork loin chops (1 1/2 lb) or 4 rib chops, 1 inch thick (1 1/2 lb)
  • 1/4 cup beef broth
  • 2 -4 small carrots , cut into 1 inch pieces
  • 3/4 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Spray 12-inch nonstick skillet with cooking spray.
  2. Heat over medium high heat.
  3. Cook pork in skillet about 5 minutes, turning once, until brown.
  4. Add broth, potatoes, carrots and onions to the skillet.
  5. Sprinkle seasonings.
  6. Heat to boiling then reduce to simmer.
  7. Cover and simmer for about 30 minutes or until vegetables are tender and pork done near the bone.
