Ingredients:

Directions:

  1. Preheat oven to 250 degrees.
  2. Butter a 10 inch tube pan and set aside.
  3. Mix together the dates, cherries, pecans, pineapple and salt.
  4. Set aside.
  5. Beat the eggs until foamy.
  6. Add the vanilla, flour, and sugar and mix well.
  7. Add the batter to the fruit mixture and stir well to coat the fruit.
  8. Pour into the prepared pan and set in a roasting pan filled with hot water, and bake for 3 hours or until a cake pick inserted in the center comes out clean.
  9. Cool the cake and run a knife around the sides and bottom of the pan and remove the cake.
  10. Douse the bourbon and wrap in cheesecloth to store.
  11. Put the cake in an airtight tin and check often to make sure the cake is moist, a little bourbon every now and then will help.
  12. To make the hard sauce, cream the butter well and add as much sifted confectioner's sugar to make it as sweet as you desire. Keep it thick and then add the bourbon, keep the hard sauce at room temperature until ready to serve with a slice of fruitcake.
