Ingredients:

  1. Preheat oven to 350.
  2. Put 5 of the bananas in a microwave bowl and cover with plastic wrap. Microwave for 5 minutes, remove and strain over a pot. Should be about 3/4 of juice, simmer down to 1/4 cup liquid. Mash strained bananas and then add banana juice, then whisk in butter, syrup, sweetener/sugar, 1/2 of the cinnamon, extracts and sour cream/yogurt. Mix in raisins if using. Set aside.
  3. In a separate bowl, whisk together flours, baking soda and other half of cinnamon. Make a well in the middle, then pour in wet ingredients and mix gently. Add pecans or walnuts if desired. Pour into a greased loaf pan.
  4. Slice the last banana into thin slices and make two rows parallel rows down the loaf. Sprinkle with white sugar and bake for around an hour, until toothpick comes out clean.
