Directions:

  1. Make the boiling water pastry ....
  2. Allow it to cool before using, approx 2 hours
  3. Form the dough balls, and gently roll our bottom crusts to fit the deep dish ramekins
  4. ****DO NOT over-handle the dough, as that will toughen it.

  6. The pie filling:
  7. Evenly distribute the pie filling to fill three medium sized ramekins
  8. Place 1 tsp butter on top of each pie
  9. Make lattice-work pastry crust for the top
  10. Bake at 350*F for 30-35 minutes, or until the pastry is light golden brown, and the filling is bubbly.
  11. Allow to cool thoroughly.
  12. Serve with ice cream or whipped cream.
