Ingredients:

Directions:

  1. Dice eggplant, sprinkle with plenty of salt and leave in strainer for half an hour.
  2. Chop onion.
  3. Saute eggplant and onions in oil and sugar.
  4. Add prepared chicken and spices, heat through.
  5. Serve on rice.
  6. Sprinkle with a bit of grated mozzerella cheese.
