Eggplant Parmesan

Ingredients:

  • 1 large eggplant (20 oz)
  • 1 large egg
  • 1 tsp oregano
  • 1 tsp basil
  • 2 tbsp olive oil

Directions:

  1. Slice eggplant into 1/4 to 1/2 in slices
  2. Beat egg
  3. Dip eggplant slices into egg, then into breadcrumbs
  4. In a large skillet, heat olive oil
  5. Brown eggplant in oilve oil
  6. Layer sauce and eggplant slices with a sprinkle of mozzarella cheese adding spices to each layer
  7. Top with remaining sauce and cheese
  8. Bake at 350 for 30 minutes
