Eggnog-Cherry Bread Pudding

Ingredients:

  • 1/2 cup sugar
  • 1/4 cup bourbon
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp g. nutmeg
  • 6 large egg yolks
  • 6 cups bread cubes (1 inch )
  • 1/4 cup almonds

Directions:

  1. In a medium saucepan, combine cream, sugar, white chocolate chips, bourbon, cinnamon, cloves, and nutmeg. Cook over medium high heat, whisking constantly until mixture begins to boil. Remove from heat.
  2. IN A MEDIUM BOWL, whisk egg yolks until smooth. Using a ladle,add half of hot cream mixture in slow steady stream to yolks, whisking constantly. Add remaining half of hot cream mixture whisking to combine.
  3. PLACE bread cubes in a large bowl, Pour egg mixture over bread cubes. Add cherries, stirring to combine.
  4. PREHEAT oven to 375.
  5. Generously grease 6 (4 ounce) ramekins.Spoon bread mixture into ramekins. Sprinkle tops with almonds.
  6. PLACE remekins in a 13 x 9 baking dish. Place in oven and carefully fill baking dish with enough water to come halfway up sides of tamekins.
  7. BAKE for 25 minute until set, Remove from ovenand let cool for 15min. Remove remekines from water. Invert onto plates.
