Pumpkin Muffins With Struessel Topping

Ingredients:

  • 3 1/2 cups flour
  • 3 cups sugar
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 4 eggs
  • 1 cup salad oil
  • 2/3 cup water (add last)
  • 1 tsp vanilla
  • 1 (15 oz) can pumpkin
  • 1 cup sugar
  • 3 -4 tbsp cinnamon
  • 1 (10 oz) bag of chopped pecans

Directions:

  1. Preheat oven to 325 degrees.
  2. Mix all ingredients together adding water last.
  3. You can make loaves or muffins.
  4. I then mix cinnamon and sugar together and sprinkle (cover completely) on top of muffin and then add pecans and sprinkle with more cinn-sugar mixture lightly before I bake.
  5. Bake for about 25 min or until done.
