Easy Cream Of Mushroom Soup

Ingredients:

Directions:

  1. Clean and slice mushrooms.
  2. Melt butter in pot and sauté mushrooms over medium high heat 3 to 5 minutes.
  3. Sir in flour to make a pasty mixture.
  4. Gradually stir in hot liquid, whisking constantly until mixture gets thickened.
  5. Simmer about 10 minutes.
  6. Sir in sherry if desired.
  7. Stir in cream last.
  8. Sprinkle soup with parsley if desired.
  9. Serves 4 to 6
