Ingredients:

  • 1/2 avocado
  • 2 cups asparagus
  • 12 oz mixed baby greens
  • 1 1/2 tbsp olive oil

Directions:

  1. Boil beets and cool
  2. Steam asparagus and cool
  3. Chop asparagus, beets, avocado in to cubes
  4. Toss in mixed baby greens with olive oil and black pepper
  5. Add goat cheese to side of plate
  6. Serve
