Ingredients:

  • 1 egg
  • 1/3 cup oil
  • 1/2 cup milk
  • 1 1/2 cups flour , sifted
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 3 tbsp sugar
  • 1 tsp cinnamon

Directions:

  1. Beat egg.
  2. Add in oil and milk and continue to beat until mixed. Set aside.
  3. Sift flour, nutmeg, salt, baking powder and sugar into the egg mixture.
  4. Mix and fill muffin cups.
  5. Combine sugar and cinnamon.
  6. Sprinkle generously on top of each muffin.
  7. Add a dollop of butter atop each muffin.
  8. Bake at 400°F for 20 minutes.
  9. NOTE: I add a couple of sprinkles of cinnamon to the batter.
  10. I also sprinkle a little of the cinnamon/sugar mixture on the bottom muffin cups before adding mix.
