Ingredients:

  • 1 large egg, beaten
  • 1/2 cup 2% low-fat milk
  • 1 1/2 cups unbleached flour , plus
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 cup sugar
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 400. Lightly spray muffin tin.
  2. Beat egg. Add 1/2 cup milk and 1/3 cup melted margarine.
  3. Combine flour, 3/4 cup sugar, baking powder, salt, and nutmeg. Blend well with egg mixture.
  4. Fill greased muffin tins 1/2 full.
  5. Bake 15 minutes until browned.
  6. Immediately remove muffins from pan and dip in remaining 1/3 cup margarine.
  7. Roll in cinnamon/sugar/vanilla mixture.
  8. Serve warm.
