Directions:

  1. Wrap each potato in piece of aluminum foil and place on baking sheet. Bake at 425 degrees for 45 min or til tender.
  2. Cut 4x2" strip from top of each potato. Scoop out pulp into large bowl. Set aside 2 cups of pulp for another use. Mash together remaining pulp, cream cheese, mayo, vinegar, pepper, salt, and lemon juice. Stir in pork. Spoon mixture into shells and top with cheddar cheese and chives. Place on lightly greased baking sheet and bake at 375 degrees for 20-25 min or til thoroughly heated.
