Double Bran - Multigrain Bread

Ingredients:

  • 1 1/2 tsp dry yeast
  • 2 1/4 cups whole wheat flour
  • 1 tsp gluten
  • 2 tbsp dry milk
  • 2 tsp salt
  • 2 tbsp brown sugar
  • 1/2 cup bran flakes
  • 1 1/2 cups water

Directions:

  1. Dissolve yeast in water.
  2. In separate mixing bowl, combine all dry ingredients except flours and salt.
  3. Add melted butter and yeast/water mixture while mixing on low speed with bread hook.
  4. Slowly add flours and salt and mix until firm dough forms, you may need to add a little more bread flour if it's too wet.
  5. Knead into a dough ball, rub with olive oil and place in greased bowl.
  6. Cover loosely with plastic wrap and dish towel.
  7. Let raise until doubled.
  8. Turn onto floured surface and knead.
  9. Form into a loaf and place in 9x5 loaf pan.
  10. Let rise until doubled again.
  11. Bake in 350 degree oven for 30 min.
  12. Remove from pan and brush top with butter or spray with cooking oil.
