Dorothy's Convent Meatloaf With Potatoes

Ingredients:

  • 1 small onion, diced
  • 1 cup soda cracker crumbs
  • 2 eggs
  • 2/3 cup milk
  • 6 -8 medium potatoes
  • 1 (10 3/4 oz) can cream of tomato soup
  • 0.5 (14 oz) can milk

Directions:

  1. Mix together meat, onion, crumbs, 1 teaspoon salt (or to taste), 1/8 teaspoon pepper, eggs, Worcestershire sauce and 2/3 cup milk.
  2. Form into oval shaped loaf.
  3. Slice potatoes into bottom of 3 quart baking dish, adding salt and pepper to taste.
  4. Place meatloaf on top of raw potatoes.
  5. Mix soup with 1/2 soup can milk; bring to boil and pour over meatloaf.
  6. Bake in 350 degree oven 1 1/2 hours, covered.
  7. Uncover and bake 15 minutes more to brown meat.
