Dolmas - Stuffed Green Peppers

Ingredients:

  • 1 1/2 lbs ground round
  • 4 large green peppers
  • 2 garlic cloves
  • 1 small onion
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 (6 oz) can tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 2 cups water

Directions:

  1. Cut the tops off of the peppers and remove the seeds and pith. Crush and chop garlic, finely chop the onions. Place ground round in a mixing bowl. Add salt and pepper, garlic, onion tomato paste and oregano.
  2. With your hands, mix the meat well and stuff into the peppers packing the meat in firmly so there are no air pockets.
  3. In a large pot, place the stuffed peppers in the bottom and add the can of crushed tomatoes and water. You may need to add more water so that the peppers are nearly covered.
  4. Add some salt and pepper to the liquid to taste. Cook on low heat for about an hour or until the meat is fully cooked. Serve with plain yogurt (madzoon) on top.
