Dijon Fried Rabbit

Ingredients:

  • 1 (3 lb) fryer rabbit
  • 1/2 cup olive oil

Directions:

  1. Cut the rabbit into 8 serving pieces from the loin, and 2 from the ribs.
  2. Season the rabbit with salt and pepper; then using a pastry brush, coat each piece with mustard.
  3. Roll the rabbit in the crumbs to coat well.
  4. Heat olive oil in pan on medium heat.
  5. Fry rabbit till golden brown (10 min) per side.
  6. Drain on paper towels and serve.
