Ingredients:

Directions:

  1. Spray small saucepan with cooking spray then heat over medium heat until hot.
  2. Sauté onion and garlic until tender about 4 minutes.
  3. Stir in sour cream, mustard and lemon juice then heat over low heat until hot.
  4. Season with salt and pepper then spoon sour cream mixture over beets and stir gently.
  5. Sprinkle with parsley then serve while warm.
