Dianne's Skinny Chicken Tortilla Soup

Ingredients:

Directions:

  1. Season chicken with salt, pepper, cumin, chili powder, coriander, garlic powder and lime juice. Let sit for 15 to 30 minutes.
  2. Heat a large skillet with 2 tsp extra virgin olive oil
  3. Brown chicken in skillet for 4 to 5 minute, adding coriander, thyme, chili powder and salt, pepper to taste
  4. Add onions, bell pepper and jalapeno. Saute until onions are tender clear.
  5. Add tomatoes and chicken stock.
  6. Bring to a boil, reduce heat and simmer on low 15 to 20 minutes to meld the flavors.
  7. Top eacg bowl of soup with 1/4 oz cheddar cheese.
  8. Serve with tortilla strips - but ADD the calories per the nutrition info on package
  9. Serve with chopped avocado - but ADD the calories per portion of avocado you use.
