Ingredients:

Directions:

  1. Season chicken breast with garlic salt, cumin, chili powder and lime juice and grill 3 minutes on each side and set aside to cool
  2. Mince garlic
  3. Dice tomatoes, bell pepper, onion, serrano pepper and cilantro
  4. Add oil to skillet and saute bell pepper, onion, garlic and serrano until tender
  5. Add tomatoes, stock, water, chili powder and cumin.
  6. Bring to a low boil. REduce heat and cook for 10 minutes
  7. Dice cooked chicken and add to pot and cook for an additional 10 minutes.
  8. Before serving, add juice from 1 to 2 limes.
  9. Add cilantro in the last minute.
  10. Alternative: Top with tortilla chips, chopped avocado and grated Monterrey Jack cheese. ADD CALORIES FAT and CARBS for additional toppings not included in original recipe
