Deep Fry Those Fiddlehead Ferns

Ingredients:

Directions:

  1. Wash and clean all brown spots off ferns. Trim stems.
  2. Blanch by putting them in boiling water for 2 minutes then into ice water to stop the cooking.
  3. Mix flour, salt and baking powder in small bowl.
  4. Stir in oil and milk.
  5. Beat to a smooth, creamy consistancy but do not overbeat.
  6. Heat 1/2 cup oil in small skillet over high heat.
  7. Dip fiddleheads in batter, then inot hot fat.
  8. Turn over until golden brown on both sides.
  9. Drain on paper towels.
  10. Serve hot.
