Ingredients:

  • 1 1/2 cups all-bran cereal
  • 1 cup milk
  • 1 1/4 cups flour
  • 1 tsp salt
  • 1/3 cup sugar
  • 1 egg
  • 1/4 cup melted shortening or 1/4 cup vegetable oil
  • 1/2 cup finely chopped dates
  • 1/4-1/2 cup chopped nuts

Directions:

  1. Add milk to All Bran and let soak 5 minutes.
  2. Add slightly beaten egg, oil, and sugar.
  3. Sift flour, baking powder, and salt.
  4. Add to first mixture.
  5. Fold in dates and nuts.
  6. Pour into greased muffin tins and bake at 400 degrees for 20 minutes.
