Danish-Apricot Filling

Ingredients:

  • 1 cup dried apricot , packed
  • 1 cup water
  • 1 cup sugar
  • 2 tbsp lemon juice

Directions:

  1. Put apricots, water and sugar into a saucepan.
  2. Heat and simmer until apricots are soft, plumped and have absorbed most of the liquid.
  3. (Can be done in a Microwave).
  4. Puree in food processor, transfer to a bowl and stir in lemon juice and almond extract.
  5. Scrape filling into a small container and cool to room temperature.
  6. Seal container and chill.
  7. Will keep refrigerated for two weeks.
