Dandelion Soup

Ingredients:

  • 2 tbsp butter
  • 1 cup onion
  • 2 bunches dandelion greens (washed and chopped , without tough stems)
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 cups water
  • 3/4 cup light cream
  • 1/4 cup honey

Directions:

  1. Melt butter in large stock pan
  2. Add onion and flour.
  3. Cook for 2-3 minutes.
  4. Add greens, stir until wilted.
  5. Add water, nutmeg, salt and pepper.
  6. Bring to a boil.
  7. Reduce temperature, cover, and simmer for 10 minutes.
  8. Carefully transfer contents of pan to blender.
  9. Blend until pureed.
  10. Add light cream and honey, blend.
  11. Pour through fine mesh sieve to remove fibers.
  12. Enjoy hot or cold!
