Ingredients:

  • 1 3/4 cups lowfat milk
  • 3 g (3 packets) equal (83289) or splenda
  • 3 eggs (or 3/4 cup egg
  • 1/4 tsp salt
  • 1 dash nutmeg

Directions:

  1. Caution: Power of microwave used not given.
  2. Place milk in 1-1/2 qt. bowl. Microwave 3-3 1/2 minutes on High or until hot but not boiling.
  3. Add remaining ingredients except nutmeg; beat well. Sprinkle with nutmeg.
  4. Micowave 11-15 minutes on Medium (50% power), or until almost set in center. Let stand 5 minutes. Serve warm or cold.
  5. Variation Instructions:
  6. Custard can also be cooked in four 6-oz. custard cups: microwave 5-8 minutes on Medium (50% power) or until almost set in center, rearrange cups halfway through cooking, and remove individual custards from oven as they finish cooking. Then add a drop or two of maple flavoring or serve with one of the fruit sauces described in this section.
