Ingredients:

Directions:

  1. Preheat oven to 180 degrees Celsius Lightly grease a 6-8 cup casserole dish.
  2. Heat oil over medium heat and brown the chicken.
  3. Remove from heat and cut into 3cm pieces.
  4. In a large saucepan melt butter and sautee onion for about 3 minutes.
  5. Stir in the flour and curry powder and cook for 1 minute until all combined.
  6. Remove from heat and stir in 1 1/4 cups milk gradually.
  7. Return to moderate heat and stir until thick.
  8. Add chicken pieces and capsicum to sauce and pour into the casserole dish.
  9. Combine eggs and extra 1/3 cup of extra milk and pour over dish.
  10. Top with grated cheese.
  11. Bake for 30 minutes or until golden brown and bubbling.
  12. Serve with rice or enjoy on its own.
