Curly Endive Salad With Ham And Gruyere

  1. Endive
  2. Remove dark leaves, cut off root and wash in a bowl of water twice,
  3. Shake dry and chop roughly
  4. Vinaigrette
  5. Put Dijon in the serving bowl.
  6. Whisk in the oil in a thin trickle until fully absorbed.
  7. Whisk in the cream and then the white wine vinegar.
  8. Season with a pinch of salt and about 4 turns of the pepper mill.
  9. Assembly
  10. Mix the garnishes into the vinaigrette.
  11. Add the chopped endive and toss until blended.Sprinkle with the chives.
  12. Add the croutons just before serving.
