Cucumber Tea Sandwiches

Ingredients:

  • 1 medium onion
  • 2 8 oz packages of cream cheese
  • 1/4 tsp of salt
  • 3 to 4 drops of green food coloring optional

Directions:

  1. In a food processor finely chop cucumber and onion
  2. Remove and drain for an our or over night in the refrigerator.(drain well)
  3. Cut cream cheese into cubes
  4. Place cream cheese in food processor and process until smooth add cucumber/onion mixture, and salt to the cheese and process until combined well. add the food coloring during this stage if you opt to use it.
  5. Remove from processor cover and chill.
  6. Cut the crust off the fresh soft bread
  7. Spread the mixture on the bread
  8. Top each slice with another to make a sandwich
  9. Cut into halves or quarters
  10. Plate and serve.
