Ingredients:

Directions:

  1. Cut pineapple in 3/4-inch slices.
  2. Heat oil in 12-inch skillet over medium-high heat; add pineapple slices.
  3. Cook 3 to 4 minutes or until beginning to brown.
  4. Divide pineapple among four plates.
  5. Meanwhile, prepare rice according to package directions to make 2 cups
  6. Add ham and peppers to skillet; cook 3 minutes, stirring occasionally.
  7. Add beans and rice.
  8. Cook, stirring occasionally, 3 minutes or until heated through.
  9. Stir in reserved pineapple juice if there is any
  10. Serve with lime wedges.
