Ingredients:

Directions:

  1. Rinse beans and pick out dirt, etc.
  2. Cover beans with water at least an inch over them.
  3. Bring to boil, then turn off.
  4. Leave beans for 2 hours.
  5. Place beans in a large stock pot.
  6. Add yellow onion, tomatoes, garlic, bay leaves and spices.
  7. Cover with 4-6 cups stock or water.
  8. Add ham or prosciutto bone.
  9. Simmer, uncovered 2 hours, stirring every 15 minutes.
  10. Garnish with chopped white onion and coriander leaves
  11. Add shrimp if desired.
  12. Add a spoon of sour cream or creme fraiche (optional)
