Crustless Quiche #2 W/Bacon and Feta

Ingredients:

  • 4 eggs
  • 1 1/2 cups 1% low-fat milk
  • 1 small onion , shredded on cheese grater
  • 1 medium potato , shredded on cheese grater
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried basil

Directions:

  1. Whip eggs and milk. I use KitchenAid.
  2. Add flour, whip some more.
  3. Stir in cheese, bacon, potato and onion.
  4. Add salt, pepper, basil.
  5. Pour into a pie dish and bake at 375F for 45 minute.
