Ingredients:

  1. Place potatoes in a large bowl; add cold water to cover and let stand 15 min minutes.
  2. Preheat oven to 425.
  3. Spray a nonstick baking sheet with vegetable cooking spray.
  4. Set aside.
  5. Drain potatoes in colander.
  6. Spread on a double layer of paper towels.
  7. Cover with a second layer of paper towels.
  8. Press down on the towels to dry potatoes.
  9. Transfer potatoes to a clean large bowl.
  10. Sprinkle with oil, pepper, and salt; toss gently to combine. Arrange seasoned potatoes in a single layer on the prepared baking sheet.
  11. Bake potatoes for 20 minutes.
  12. Using a spatula, turn potatoes; sprinkle with garlic. Bake until golden, about 20 minutes, turning baking sheet after 10 minutes for even browning.
  13. Serve immediately with ketchup on the side.
  14. Add 1/2 teaspoon of paprika when tossing potatoes with spices.
  15. Bake as previously directed.>.
