Creamy Prawns In Noodle Nests

Ingredients:

  • 1 slice of lean bacon - chopped into small pieces
  • 2 tblspn sour cream
  • 2 tblspn oil
  • 24 medium size cooked prawns - peeled
  • 1 tblspn alfalfa sprouts

Directions:

  1. Pre-heat oven to 350 degrees
  2. Oil well 24 mini muffin pan cups
  3. Cook bacon in pan until crisp, drain grease & cool
  4. Combine bacon with sour cream
  5. Place noodles in bowl, cover with hot water & let stand 5 mins
  6. Drain well
  7. Divide noodles between prepared mini muffin cups & press firmly into cups
  8. Brush lightly & evenly with oil
  9. Bake for about 15 mins or until crisp
  10. Remove nests from pans & turn upside down on wire rack
  11. Place wire rack on baking tray & return to oven for about 5 mins or until nests are crisp
  12. Cool to room temperature
  13. Just before serving, top each nest with a prawn, sour cream mixture & sprouts.
  14. NOTE:-
  15. Nests can be made up to 3 days ahead & stored in an airtight container
