Creamy Caramel  Chocolate Cheesecake

Ingredients:

  • crust
  • filling
  • 14 oz caramels
  • 1/2 cup milk
  • 3 8 oz package cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • topping
  • 1/2 cup pecan pieces

Directions:

  1. CRUST:
  2. Mix butter &crumbs with food processor. Press into bottom and part-way up sides of a springform pan. (If you don't have a food processor) Put oreos in a ziplock and press out until very fine, then mix the crumbs and butter in mixing bowl.
  3. Place caramels and milk in a small microwavable bowl.
  4. Microwave on HIGH 3 minutes,stirring after each minute, until caramels are completely melted.
  5. Pour 1/2 of caramel mixture into crust (set remainder aside for later). Refrigerate 10 minutes.
  6. Beat cream cheese until smooth.
  7. Add sugar and vanilla, and beat until smooth.
  8. Add eggs, one at a time, beating after each.
  9. Pour over caramel mixture in crust.
  10. Bake until center is almost set:
  11. Light pan – 65 – 75 minutes at 325
  12. Dark pan – 65 – 75 minutes at 300
  13. Refrigerate at least 4 hours or overnight.
  14. TOPPING:
  15. Using: 1/2 cup pecan pieces & 2 squares semi-sweet baking chocolate
  16. Cover cake with remaining caramel mixture.
  17. Melt chocolate just as directed on package.
  18. Just before serving, sprinkle with pecans, and drizzle with chocolate.
  19. Eat up & Enjoy!
