Cream of Red Lentil Soup

Ingredients:

  • 2 1/2 cups water
  • 1 cup red lentil
  • 3/4 tsp salt
  • 3/4 tsp cumin
  • 1/8 tsp cayenne
  • 1/2 cup soymilk

Directions:

  1. In a saucepan, combine all of the ingredients except the soy milk,
  2. Cook until lentils are soft.
  3. Puree with the soy milk.
